2nos Eggs
50gm Caster Sugar
5gm Honey
60gm Cake Flour
17gm Unsalted Butter
27gm Milk
5gm GH Durian Emulco

Durian Baked Cheesecake
200gm Cream Cheese
40gm Caster Sugar
1nos Eggs
40gm Whipping Cream
6gm Cake Flour
6gm GH Durian Emulco

Chilled Cheesecake
125gm Mascarpone Cheese
25gm Caster sugar
5gm Gelatin Powder
15gm Water
125gm Whipping Cream
3gm GH Durian Emulco

Directions

Method:

Durian Sponge
1. Warm up the milk and unsalted butter, stir until well combined.
2. Double-boil eggs, caster sugar and honey over the pot and mix it until smooth. Then, add in cake flour and the melted milk and unsalted butter, mix it well.
3. Mix in GH Durian Emulco, mix until well combined.
4. Pour the cake mixture into the cake tray and bake at 180°C for 20 minutes or until the cake is completely baked.

Durian Baked Cheesecake
1. Add in cream cheese, caster sugar and egg, mix until well combined.
2. Add in cake flour and whipping cream, mix it until fold well.
3. Mix in GH Durian Emulco and mix well.
4. After baking, place the cake on a wire rack and leave it cool aside. Then, pull out the cake from the tray and cut the top of the sponge cake and make it into crumbs.
5. Place the sponge cake into the cake tin and pour the durian cream cheese mixture and steam bake at 150°C for 35 minutes.

Chilled Cheesecake
1. Mix water and gelatin powder together and melt it. Whisk the whipping cream till soft peaks.
2. Add in mascarpone cheese, caster sugar and mix it well, then add in melted gelatin and whipped cream until well incorporated.
3. Mix in GH Vanilla Flavour, mix until well combined.
4. Pour the cheese mixture onto the baked cheesecake and chill for 2 hours. Then as a garnish, put the crumbs on top and the side of the cake.
5. Serve on the plate, you’re ready to eat.
