Directions
Step 1: Prepare the Peanut Crumble
Combine: In a small bowl, add the 36gm unsalted butter, 29gm cake flour, 0.4gm sea salt, 36gm brown sugar, and 36gm peanut powder.
Mix: Mix these ingredients together (using your fingers or a fork) until they form a crumbly, sand-like texture.
Set Aside: Keep the crumble aside for later.
Step 2: Make the Cake Batter
Wet Base: In a mixing bowl, combine the 186gm eggs, 200gm sugar, 2gm salt, and 111gm whipping cream. Whisk well until combined and smooth.
Dry Ingredients: Sift in the 186gm cake flour and 3.5gm baking powder. Mix until just combined (do not overmix).
Add Fat: Pour in the 73gm melted unsalted butter. Mix until fully incorporated.
Flavor: Add the 30gm GH Chocolate Flavour and mix until the batter has a uniform chocolate color.
Step 3: Assemble and Bake
Fill: Pour the chocolate cake mixture into your prepared baking mold.
Top: Sprinkle the Peanut Crumble generously over the top of the batter.
Bake: Bake in a preheated oven at 165 degree for 1 hour.
Tip: Check the cake at the 50-minute mark by inserting a skewer. If it comes out clean, it is ready.
Cool: Let the cake cool in the mold for a while to set, then unmold it carefully.
