  • 125g Butter (Softened)
  • 10ml Chocolate Emulco
  • 200g all-purpose flour
  • 25g Almond Powder
  • 10g Cocoa Powder
  • 75g Icing Sugar
  • 25g Sugar
  • Pinch of Salt

Directions

  • Preheat oven to 170°C (340°F) and line a baking tray.
  • Mix butter and icing sugar until well combined.
  • Add almond powder, chocolate emulco, and salt, mixing thoroughly
  • Sift and fold in flour, cocoa powder, and sugar until a smooth dough forms.
  • Shape into small cookies and chill for 20 minutes.
  • Bake for 12-15 minutes, then let cool on a wire rack.
  • Pipe cream onto one cookie and sandwich with another
  • Bake in the preheated oven for 15-20 minutes or until golden brown.
  • Remove from oven and let cool slightly before dusting with powdered sugar.
