Ingredients
- 125g Butter (Softened)
- 10ml Chocolate Emulco
- 200g all-purpose flour
- 25g Almond Powder
- 10g Cocoa Powder
- 75g Icing Sugar
- 25g Sugar
- Pinch of Salt
Directions
- Preheat oven to 170°C (340°F) and line a baking tray.
- Mix butter and icing sugar until well combined.
- Add almond powder, chocolate emulco, and salt, mixing thoroughly
- Sift and fold in flour, cocoa powder, and sugar until a smooth dough forms.
- Shape into small cookies and chill for 20 minutes.
- Bake for 12-15 minutes, then let cool on a wire rack.
- Pipe cream onto one cookie and sandwich with another
- Bake in the preheated oven for 15-20 minutes or until golden brown.
- Remove from oven and let cool slightly before dusting with powdered sugar.
