500gm Muffin Mix (Vanilla Flavor)
185gm Eggs (approximately 2 whole eggs)
140gm Water
185gm Oil (preferably a neutral oil)
2gm Green House Thai Tea Emulco
(for a rich Thai tea flavor)
Thai Tea Chantilly
300gm Macreme Topping Cream
2gm Green House Thai Tea Emulco
(to infuse a delightful
Thai tea essence)
Directions
Thai Tea Muffins
1. In a mixing bowl, combine all the muffin ingredients: muffin mix, eggs, water, oil, and Thai tea emulco.
2. Using a mixer with a beater attachment, mix the ingredients on low speed for about 3 minutes, or until the batter is smooth and homogenous.
3. Once mixed, feel free to add any desired toppings or fillings to the batter before transferring it to the muffin tins.
Thai Tea Chantilly
1. In a separate bowl, combine the macreme topping cream and Thai tea emulco.
2. Mix the ingredients until they are well incorporated and the cream reaches a light, fluffy consistency.
Assemble: Add the Thai Tea Chantilly to the top of the muffin and decorate with your favorite decoration.
