Valentine’s: Bavarois in Cup

Ingredients

Bavarois

4nos Egg Yolk
83gm Sugar
375gm Milk
135gm Whipping Cream
10gm Gelatine Powder
40gm Water
7gm GH Ruby Chocolate Emulco
7gm GH Vanilla Flavour

Directions

Method:

1. Mix egg yolks and sugar till creamy.
2. Boil the milk into a pot.
3. Then, bloom the gelatine.
4. Add in egg mixture into the milk, bring to cook till 82°C
5. Add in the gelatine into the hot mixture, stir till well combined.
6. Sieved the mixture, and 2 divide the mixture into 2 bowls.
7. Add in GH Vanilla flavour into both bowls and add GH Ruby Chocolaye emulco into 1 bowl, and mix it well.

Assemble:
1. Add the vanilla mixture into the glass, then chill for 1 hour.
2. Once the vanilla is set, add the ruby chocolate mixture into the glass, then chill for another 1 hour.
3. Once it sets, you may garnish with mint leaves. You’re ready to serve. Enjoy!
